The early American settlers concentrated their maple syrup and made cakes to keep it until the next spring's sugaring season. With no refrigeration or canning ability, this was a great way to have sugar to use year-round. Maple Sugar was their primary source of sweetener. This sugar is somewhat hard and grainy.
